Have you heard about this food named tupig? Do you know its look and its taste? …It is a food native to the Ilocanos of the Ilocos region. The first time I heard and saw this tupig is when we went to Pangasinan (that was years ago). I saw my uncle buying lots of tupig for my mom. My uncle keeps on telling me that I should try this food and surely I would love it. But I really don’t like its smell and its look. Ahaha! Then the second time that I saw this tupig is when we went to tarlac for a roadtrip/foodtrip. I’m with my friends that time and with my han. When were on our way home my han saw this people selling tupig and he told us that he wants to buy one. So we stop for a while Ahaha! I didn’t know that it’s one of his favorites… (Yay! Now I know) ahahah! As far as I remember he bought 10pcs of it for only 50 pesos, ooops! Guess what??? He ate all of that! ahahah! Ok let me share with you the last part of the story. Last Monday my uncle who lives in pangasinan bought us 20 pcs of tupig. Waaa! So I got curious what’s on this tupig that made them love it. I tried one piece of it and I was surprised on its taste! Can’t explain but I love it! Now I learned one thing…don’t judge the food by its smell and in its look! ahaha ok? Lesson learned! Here are the ingredients and procedures of “TUPIG”….

Tupig Ingredients:

  • 2 cups glutinous rice, soaked overnight
  • 1 cup sugar
  • 1 cup young coconut, shredded into strips
  • banana leaves passed through flames to wilt

Tupig Procedures:

  • Grind the rice until fine.
  • Transfer the ground rice to a choose cloth. Tie the end of the cheese cloth. Press to remove excess water.
  • Place the ground rice into a tray to dry a little.
  • Add the sugar and young coconut. Mix well. Add water to form a soft mixture.
  • Place 3 tablespoons of the mixture, form into a cylinder and place in banana leaves. Flatten a little before broiling over hot charcoal.
  • The tupig is done when the filling is brownish and chewy in consistency.
