MOM’S SEAFOOD KARE KARE
This morning, my mom cooked something special for us, seafood kare-kare one of my favorite dishes. Regularly, my Mom never asked or tells me to get up on my bed but she let me sleep as long as I want. This day is different, for she kept on calling me to get out of my room and join them for breakfast. . At first I was so irritated because of the difficulty of pulling your body to the kitchen but when I was there at the kitchen and saw the food, woooah! I smiled and was pump up for the morning in an instant. Without further delays I said, what are we waiting for? Common Mom let’s eat! Ahaha! Funny thing was they all have already taken their breakfast. So here I am, still at the table eating crabs…ahaha! I stop the rice already to enjoy the crab.. Enjoy the food peeps!
Here are the ingredients and procedures on how to cook “Seafoods Karekare”
- alimasag, crab, trimmed, cut in half
- Shrimp
- tahong, mussel
- eggplant, slice diagonally
- sitaw, cut into 2″ long
- pechay, trimmed
- garlic, chopped
- onion, chopped
- unsweetened peanut butter
- puso ng saging
- bagoong
- atsuete
- seafood broth
Procedures:
- Soak annato/asuete seeds in water, leave it until water turned orange.
- Prepare for your seafood. Clean and wash tahong, crabs, well. For tahong and clams, boil them until shells are opened. Set aside the broth. For shrimps, take off its shell, leave the head and tail part.
- Saute garlic and onions. Add the broth, peanut butter and puso ng saging. Boil the puso ng saging until soft and tender.
- Add the annato sauce, bagoong ang the vegetables, simmer until veggies are cooked.
- Add the shrimps and Crabs, cook it until it turned orange. Do not overcook it.
- Put the peanut butter.
- Lastly, add the boiled tahong. Mix them all together, simmer once.
- Serve while hot!
