I have been staying in Laoag many times and have been passing through towns of Paoay, Vigan and the entire Ilocos Norte region but I always missed to taste the famous Pinakbet Pizza.  I have missed it because of the ignorance that one tasty food exist.  I have been searching where can I actually find this one in Metro Manila, but there is none but there are in Ilocos Norte and two of them are Saramsam restaurant in Laoag City and Herencia Cafe in Paoay.

I have been looking on how to do this at your very own kitchen but sadly, I cannot find one.  So maybe its just like cooking the famous Ilokano Pinakbet just what like Herencia co-owner Sammy Blas said:

the idea of using pinakbet as a topping for pizza intrigued him; for example anchovies which have been used in pizza making for ages were replaced by the similar yet uniquely native ingredient bagoong, then add okra, eggplant, and longganiza meat as toppings over mozzarella cheese, all placed on a classic hand tossed pizza crust. Voila! A dish which is both an aesthetic as well as a gastronomical pleasure.  (via Ilocos Times)
