Photo 0257 GINATAANG KAMANSI (SEEDED BREADFRUIT)

Are you guys familiar with Kamansi or what we called seeded breadfruit? When I was a kid I thought this seeded breadfruit is a jackfruit (langka) because both have sharp points on its skin. There is this One day when my lolo (grandfather) was bringing a large piece of seeded breadfruit I asked him if we could have it for meryenda and boiled it with brown sugar (sweeten langka) but he told me that my lola will prepare it for our dinner not for meryenda ahah! So I got curious with what my lolo told me. I was looking at him while he’s peeling the breaded fruit and when I saw what’s inside of the kamansi that’s the only time I identified the difference of jackfruit and seeded breadfruit. Ahaha! So what we have today is Ginataang Kamansi or “Seeded Breadfruit in coconut milk”. If you will try this recipe at home it’s a hundred percent that you will love its taste. That’s why im gonna share with you guys the ingredients and procedures of Ginataang Kamansi.

Ingredients:

  • coconut Milk
  • pork or fish
  • ginger
  • garlic
  • onions
  • sili/ bird’s eye chilli
  • salt/fish sauce
  • vetsin
  • kamansi (seeded breadfruit)

Procedures:

  1. Extract thick coconut milk by combining 2 cups of warm water with grated coconut and squeezing the juice from it. Set Aside.
  2. Extract thin coconut milk by combining the same grated coconut with 5 cups of warm water. Set aside.
  3. Heat oil in a pot and sauté garlic, onions and ginger until onions become translucent.
  4. Add pork and fry in together with the garlic onion and ginger until its golden brown.
  5. Pour in the thin coconut milk and the breadfruit pieces. Stir
  6. Simmer until breadfruit is tender and the sauces a little dry.
  7. Add the thick coconut milk and fish sauce.
  8. Simmer for around five minutes or until the sauce has become oily and the coconut milk has curdled a bit.
  9. Add salt to taste and the chilli.
