The menudo. It is an ordinary dish to others but this can also be called a special dish. Maybe because it is usually included during town fiestas and birthdays here in the Philippines. Special occasions like in province, the MENUDO is always on the list. I don’t know why but if you’re going to ask your parents maybe they know the reason why. I tried to ask my mom but she just answered me “I don’t know maybe they just want to” ahaha! How about you guys can you ask your mom or your elders and share with me their answers? …
Here are the ingredients for MENUDO:
Pork
Pork liver
Soy Sauce
Vinegar/Calamansi juice
Garlic
Onions
Tomato Sauce
Vetsin
Potatoe
Carrots
Red bell pepper
Green peas (optional)
Reno (optional)
Sausage/Hotdog (optional)
Procedures:
In a medium casserole, cook the pork in soy sauce and vinegar/calamansi juice let simmer until tender
Cook the potatoes, red bell pepper and carrots, sauté garlic and onions, then add sausage and tomato sauce
After 3mins, add the pork and pork liver. Cook until the liver is done. Pour the pork sauce
Add the grean peas and vetsin. Cover it and simmer it for 20mins.
