CHICKEN ARROZ CALDO
want something for breakfast and snack? Here is the CHICKEN ARROZ CALDO –“HOT RICE” (with chicken liver) that you can serve for today. Maybe some of you don’t like liver and some are requesting to have their lugaw with chicken liver. All you have to do is separate the liver and just add it to the lugaw when it is already being served. I know kids really enjoyed eating this Filipino dish lugaw with chicken and love being served for their meryenda. You can also serve this to someone who is sick especially to those who have fever and flu. When im still studying my friends and I would have to take one ride for us to get into our favourite karinderia just to eat arroz caldo before we go home. I really miss those times. Hope we could go there again and will have a food trip the whole day! Weee!
Ingredients:
- chicken; cut in small pieces
- chicken liver
- uncooked malagkit or plain rice or combination
- small onion; chopped
- garlic; chopped
- ginger; sliced
- water or broth
- Fish sauce
- Cooking oil
- Salt to taste (optional)
- Chicken bouillon cubes (optional)
- Magic sarap seasoning
- 1 tablespoon minced fried garlic (for garnishing)
- 1 tablespoon scallions (for garnishing)
Procedures:
- In a casserole, sauté garlic, onion, and ginger in oil.
- Add chicken and liver stir fry with fish sauce until light browned. Drain any remaining oil and then add rice.
- Add enough water and bring to boil. Continue cooking, stirring occasionally, until chicken is tender and rice is done (add hot water if necessary). Put the knor cubes and seasoning (magic sarap)
- Season with fish sauce according to taste. Serve hot in a bowl.
- Garnish on top with fried minced garlic and scallions. (optional)
